This delicious dessert is a crowd pleaser anytime we serve it at the retreat center. If you are a coconut lover, you will love these lemon bars.

Crust:

  • 1 c. walnuts, pecans, almonds or a blend
  • 1/4 c. unsweetened coconut
  • 6 large soft dates
  • 1/4 t. salt
  • 1 T. lemon zest
  • 1/2 t. water as needed for combining

Top Layer:

  • 6 T. coconut oil
  • 3 T. coconut butter
  • 3 T. honey or agave
  • 3 T. lemon juice
  • 2 t. lemon zest
  • dash of turmeric

Directions

Process the ingredients for the crust (add a little water if necessary to combine).
Press into a small glass dish.
Melt the coconut oil with the coconut butter; do not boil.
Stir in the remaining ingredients.
Pour on top of the crust.
Chill in the fridge or freezer until it gets firm.

Serve and enjoy!
